A variety of summer squash.

3 tablespoons canola or olive oil

1 tablespoon plain sesame oil

1½ cups thinly sliced shiitake mushroom caps

¼ cup diced red onion (¼-inch dice)

1 heaping tablespoon finely grated peeled fresh ginger

1 heaping tablespoon minced garlic

4 cups cooked brown rice, cold

2 large eggs, lightly beaten (optional)

1½ cups assorted leftover cooked meats or vegetables, cut into chunks or dice (optional)

2 tablespoons soy sauce

1. Heat a large skillet, preferably cast-iron, over medium heat, and add the canola and sesame oils. Add the mushrooms, red onion, and ginger, and cook, stirring frequently, until the mushrooms soften, about 5 minutes. Then add the garlic and cook, stirring constantly, until it’s fragrant, about 1 minute.
